
What? Live without cheese? Inconceivable!
I’m starting to learn about cheese making in the medieval period. Those of you who know me, know I do not like spending time in the kitchen, but this is a health issue. I need to start watching my salt intake, and cheeses are so salty, I am going to try and experiment with developing low salt cheeses. I have learned salt is a required ingredient for hard cheeses, so I need to see what the minimum I can get away with is, and still have it develop correctly. If I am going to spend time in the kitchen, I might as well do it the old fashioned way while I’m at it and contribute some knowledge to my journey backwards.
